The Rodriguez Family has been one of the principle drivers moving quality and sustainable coffee production forward in Bolivia. El Fuerte was the first farm the Rodriguez Family planted in the Samaipata region to test the viability of coffee production in the region. The results of El Fuerte convinced them to invest in the Region.
The Rodriguez Family noticed that their naturals needed more stabilization, and developed a process for drying their naturals which results in a more delicious, super clean tasting natural. They pay close attention to the moisture content at each stage of drying. First, they dry it on raised beds for 5 days, bringing the cherry to a 30% moisture content. Next, they move the cherry to stationery dryers for one day, until it hits 16%. Afterwards, they place the cherry in reposo for one day to stabilize the cherry before returning it to the stationary dryer again for one more day until it hits 10-11%.
This natural Java is one of the most delicious coffees that we have had the privilege to have in our offerings. It is such great expression of this variety, and we are excited to have it back this year.
