Mauricio started the farm in 2015 and has since been producing fantastic lots every year. This is due to his efforts in teaching his pickers to select only the ripest cherries, and improving his plantation through sustainable techniques. Coffees from his farm, San Martin, are processed in his neighbour's mill, where Mauricio closely monitors every step. His coffees are then sun dried on raised bed next to his house where it gets raked frequently to ensure consistency.
