Daterra’s approach to farming is unlike any other. The estate is divided into 216 smaller farms, each individually managed and harvested to ensure optimal ripeness. Their focus on precision extends to their cherry sorting process, where a proprietary technology, developed over a decade, ensures that only the highest quality cherries make it through. Sunlight is crafted from pulped cherries, which are mechanically harvested and pulped to remove the fruit, leaving the seeds behind. The coffee is then dried on patios and finished in mechanical dryers until it reaches an ideal moisture level of 11.5%. Once stabilized in silos, the coffee develops its rich flavour profile, delivering a smooth and well-balanced cup that embodies the very best of Daterra’s sustainable and innovative practices.
