It’s not quite like the modern Typica you may know, and we love it for that. Add Omar’s thoughtful farming and precise processing, and you’ve got something truly special in the cup.
The process behind this coffee is all about care and patience. After a careful 24–36 hour lactic fermentation, the beans get a sun-soaked holiday for 8–12 days, followed by a mellow rest in the cellar for up to 30 days. All this attention brings out a refined balance in the cup — think juicy plum, sweet apricot, and a touch of black tea warmth.
