This is our third coffee this year from Daterra, and we have been so thrilled with the quality of these coffees, and we are excited to have the opportunity to share this coffee with you. and We are grateful to be able showcase a producer that puts so much emphasis on giving back to the coffee community and the planet. Founded in the 80’s when sustainability was virtually unknown, the Daterra Coffee Project continues to be entered around social development and environmental preservation.
Daterra’s land is broken up into a series of 216 mini farms ranging from 5-15 hectares each. Each of the terroirs on the farm are harvested individually, based on their optimal cherry maturation. The cherry are picked and sorted using unique technology that ensures that each cherry is sorted correctly, a technology that took them over 10 years to develop.
This pulped yellow bourbon is processed by mechanically removing the skin and mucilage off the coffee cherries, without the use of water. Botucatu is the name of the city where the first yellow bourbon appeared as a natural mutation. Only the ripest fruits are picked and processed presenting a naturally brighter acidity and sweetness.
