El Burro is one of three farms owned and run by the Lamastus Family. This farm is further south than Elida Estate, which puts it closer to the Pacific ocean and in a completely different microclimate. This microclimate is so different that the beans have a different shape – even though both farm's trees came from the same nursery. This gesha is processed as an ASD (anaerobic slow dry). This is a style of natural that the Lamastus family has developed and honed over the last few years. Cherry is placed in a sealed fermentation tank for 5 days and then dried very slowly under shade. This process emphasizes and intensifies the red fruit qualities of this coffee and gives it a round, lactic acidity.
