This is our first time featuring coffee from Daterra. We’re excited about the opportunity to showcase a producer that puts so much emphasis on giving back to the coffee community and the planet. Founded in the 80’s when sustainability was virtually unknown, the Daterra Coffee Project continues to be entered around social development and environmental preservation.
Daterra’s land is broken up into a series of 216 mini farms ranging from 5-15 hectares each. Each of the terroirs on the farm are harvested individually, based on their optimal cherry maturation. The cherry are picked and sorted using unique technology that ensures that each cherry is sorted correctly, a technology that took them over 10 years to develop.
Moonlight is created by mixing a blend of both naturally processed and semi-washed coffees. Something unique about this coffees process was that Daterra dried the cherry while it was still attached to the branch. This can only be done under perfect dry weather conditions, something that is not always possible in other regions. Drying their natural coffee on the branch contributes a heavy body and sweetness to the coffee.
Moonlight offers all the classic, approachable flavours in the cup that we would expect and love from a Brazilian coffee. The terroir, variety and processing method all contribute to its nutty and sweet profile.
