Carlos Cadena is part of a new wave of Mexican coffee producers shaping the future of quality in the region. As a third-generation grower, he blends tradition with fresh curiosity across his family’s farms, Finca Pocitos and Finca Huehuetepan. His commitment to quality has already earned serious recognition, including first and second place at Mexico’s 2024 Cup of Excellence with his natural gesha.

On both farms, Carlos focuses on thoughtful, consistent processing to bring out clean, sweet flavours. For this washed lot, ripe cherries are depulped, fully washed, and dried for 36 hours on raised African beds. It’s a straightforward approach done with careful attention, letting the natural character of the Sarchimor variety come through clearly.

In the cup, you’ll find a mellow, trail-mix-meets-biscuit profile with soft dried-apple sweetness woven through. It’s comforting, steady, and an easy favourite, the kind of coffee you reach for when you want something dependable and delicious.
