El Huabal

El Huabal sits high in the northern mountains of Cajamarca, where cloud forests, rich volcanic soil, and a cool humid climate create one of Peru’s most exciting coffee landscapes. Farms throughout this area are small, family-run, and tucked between 1,600 and 2,000 metres. That slower, shaded ripening builds sweetness in the cherries and gives the region its signature mix of clarity and gentle fruit.

Much of the coffee here is grown by members of Café Solidario, a collective that brings together more than 250 producers who are committed to sustainable farming and better access to specialty markets. Their focus is on community development, transparent sourcing, and responsible agriculture. It’s a group that has quietly built a strong reputation for both quality and care, and it shows in every lot that comes out of the region.

Producers in El Huabal use a traditional two-stage dry fermentation to bring out depth and aroma in the cup. Cherries rest before depulping, then ferment again in parchment, allowing sugars to concentrate and acidity to settle into a balanced, sweet profile. After a slow 15 to 20 days of drying under covered patios or solar beds, the result is a clean, expressive washed coffee with chocolate, apple, and caramel tones that feel familiar, comforting, and quietly vibrant: a classic Fruity Classics coffee moment.
