Carlos Cadena is a third-generation coffee producer helping rewrite what Mexican coffee can be. Working across his family’s farms, Finca Pocitos and Finca Huehuetepan, Carlos has leaned hard into quality, curiosity, and thoughtful experimentation, always with an eye toward pushing flavour forward.

That mindset really shines in how he approaches processing. This Gesha goes through a careful honey process with a 36-hour dry tank fermentation, then dries slowly on raised African beds. The result is a coffee that feels layered and vibrant, while still staying balanced and approachable.

Carlos’s work has not gone unnoticed. In 2024, his Gesha earned both first and second place at the Cup of Excellence, a huge moment for his farms and for Mexican coffee as a whole. It’s a clear sign of where his coffees are headed, and why we’re so excited to share this one with you.
