Miguel Angel Ruiz

Miguel Angel Ruiz is one of those producers who feels like part of our origin story. He was one of the very first people we bought coffee from when we started roasting, and we’ve been happily drinking his coffees ever since. Grown in La Leona, a small micro-region in Santa Bárbara, Miguel’s coffees have always stood out for their personality and clarity.

On his farm, Miguel grows both Parainema and Pacas, with this lot showcasing the Pacas variety. Pacas is a natural mutation of Bourbon, known for being hardy, adaptable, and quietly impressive in the cup. It’s the kind of variety that doesn’t need tricks to taste good, it just does the work.

Processed as a washed coffee, this Pacas keeps things clean and balanced while still feeling lively and expressive. It’s a familiar, feel-good profile with a little spark to it, the kind of coffee that reminds us why we fell in love with sourcing in Honduras in the first place.
