Jose Ignacio “Pepe” Jijon is one of the driving forces behind Ecuador’s rise on the world coffee stage. Alongside his son Jose, he’s spent the past 15 years shaping Finca Soledad into a benchmark for quality, curiosity, and thoughtful experimentation. Their coffees are consistently among the most exciting we taste each year.

At Finca Soledad, innovation and intention go hand in hand. This Sidra goes through a carefully managed wave honey process, starting with sealed tank fermentation in cool conditions, followed by slow, dark room dehydration and a long stabilization period. Every step is deliberate, designed to protect sweetness, structure, and balance while letting the coffee speak clearly.

Sidra itself has deep roots in Ecuador, first discovered here before being identified as an Ethiopian variety. In Pepe’s hands, it feels right at home. This coffee is a perfect example of why we love working with producers who push boundaries while staying grounded in place, patience, and craft.
