Alejo Castro

Volcan Azul is a name that carries deep history and innovation. Owned by Alejo Castro, this Costa Rican farm has been in the family for generations, with roots tracing back to the early 19th century. Today, Alejo continues this legacy by pushing the boundaries of quality and sustainability, experimenting with unique varieties and refining processing methods to bring out the best in each harvest.

This lot showcases the H10 Hybrid, also known as Milenio—a carefully developed cross between Sarchimor T5296 and Sudan Rume. As one of the first F1 hybrids, H10 was designed for resilience and exceptional cup quality. Processed using the red honey method, this coffee retains a rich layer of fruit mucilage during drying, resulting in a silky, complex profile with notes of iced tea, caramel, and stone fruit.

At Volcan Azul, every step of production is intentional. The farm’s high-altitude patios slow down the drying process, allowing the beans’ flavours to fully develop. Combined with controlled mechanical drying, this approach enhances the longevity and structure of the coffee. The result? A vibrant and deeply layered cup that highlights both the tradition and innovation at the heart of Volcan Azul.
