They have designed their own processing equipment and protocols: measuring Brix, pH, temperature. The processes are informed by their rigorous studies and feedback in onsite laboratories. These hyper-custom processes have created completely new styles of coffee and flavor profiles. Not only are the flavours incredible, but this systematized approached ensures that the quality and flavour profile is consistent from year to year.
This is our second year purchasing coffee from Granja Paraiso 92. We decided to choose a coffee that would really benefit from specific processing and showcase the craft that Wilton, the owner, has honed over many years: Decaf! The decaffeination process can often mute the flavours of the coffee. Wilton’s processing style holds up remarkably well to decaffeination and the result is a coffee that many might not even recognize as decaf!
