This coffee comes from Juan Jose Salazar, who grows the San Isidro variety on his farm, Pejual, in Costa Rica’s West Valley. San Isidro is a variety developed specifically for Costa Rica’s climate, and it shines in this lot. After harvesting, the coffee is sent to the Cafes de Altura mill, where Esteban Villalobos Corrales (one of the world’s top coffee processors) handles the natural processing with incredible care and expertise.
Cafes de Altura is a large mill, but what makes it special is Esteban’s focus on quality and innovation. Every coffee is processed with the perfect method to bring out its best. This lot is no exception, offering up classic Costa Rican natural flavours of dried fruits, gingersnap cookie, and caramel. The slow drying process adds even more sweetness and richness to the cup.
While this is our first year working with Juan Jose, we’ve been partnering with Esteban and the team at Cafes de Altura for over six years. Their passion for exceptional coffee keeps us coming back, and we’re so excited to share Juan Jose’s beautiful coffee with you!
