Popayan comes from the highlands of Cauca, Colombia, where steady conditions and rich volcanic soil create a natural sweet spot for growing great coffee. Tucked within the Andes, this region benefits from a consistent climate that brings clarity and balance to every cup, even after decaffeination.

This lot is built through collaboration with around 65 small producers across the region. Together, they contribute to a program focused on quality, consistency, and long-term partnership. Farmers are paid premiums based on quality, encouraging thoughtful picking, careful processing, and continued investment in their farms.

Decaffeinated using a gentle process that preserves the coffee’s character, this one keeps all the good stuff intact. Smooth, comforting, and quietly sweet, it’s the kind of decaf you’ll want to drink well past your usual cutoff.
