Delmar Salas has been shaping great coffee in Costa Rica’s West Valley for decades, tending to his farm La Parcela with a mix of agronomy know-how and genuine curiosity. His family has been part of Café de Altura since its early days, and that long partnership shows in the steady quality and expressive flavour that come from his lots year after year.

At La Parcela, Delmar focuses on thoughtful farming and selective renovation to keep his varieties thriving for the long haul. Both Caturra and Red Catuai love the cool mountain air here, and Delmar’s attention to detail helps them develop dense, sweet cherries full of potential.

This anaerobic natural takes that potential and pushes it into the Funky Infusions territory. Sealed-tank fermentation and slow drying build layers of spice and sweetness that feel playful and comforting at the same time. Think cinnamon, apple cider, and molasses vibes wrapped into one lively, flavour-bending cup.
