This coffee is a collection of varieties grown by many producers in the Popayan region. These farmers bring their harvest to a mill in Popayan where the coffees are blended together and milled before being transported to the Caldas region to be decaffeinated. The sugar cane decaffeination process was developed in Colombia, which is known for enhancing the coffees natural sweetness while maintaining the coffees attributes.
