Maximino Gutiérrez Tejada’s coffee has been a standout on our menu for five years, and it's one we look forward to each season. His farm, Florestales, is nestled in Colombia’s lush landscape, where he cultivates a beautiful balance of tradition and innovation. Maximino inherited the farm over three decades ago, and since then, he has been dedicated to improving his coffee’s quality through thoughtful processing methods and the introduction of new varieties. This dedication is evident in every cup, with each sip showcasing a flavour profile that has quickly become one of our favourites from Colombia.
Maximino’s journey hasn’t always been smooth. For years, he struggled with inconsistent payments that left his income unstable despite the exceptional quality of his coffee. This changed when he began working with a smaller, quality-focused exporter, ensuring that the true value of his coffee was recognized and returned to him. Now, the stability in his income allows him to further invest in his farm, and we are consistently impressed by the results. Every year, Maximino's coffee delivers a remarkable clarity of flavour, and we are proud to offer this exceptional caturra on our menu.
Beyond coffee, Florestales is a place of biodiversity. Maximino and his family work hard to protect the environment around them, growing citrus fruit and plantains alongside their coffee trees, which thrive next to three hectares of conserved forest. Their commitment to environmentally friendly practices ensures the integrity of their land, allowing them to produce some of the most delicious and sustainable coffees we’ve tasted.
