This is our first Sudan Rume and the first coffee we purchased from Inmaculada Farms in Colombia. They are no strangers to firsts as one of the earliest farms to adopt carbonic maceration processing and the first farm to have the rare Eugenoides species in production. They are experts in both production and processing; able to nurture and grow even the most delicate of varieties and then preserve and highlight the unique characteristics of these rare gems. Sudan Rume is an African landrace variety discovered in Sudan near the border of Ethiopia. This variety’s cup profile is unique with tropical fruit, hints of spice, and a well integrated acidity. This lot underwent anaerobic fermentation before drying, highlight tropical and purple fruit.
